The authentic flavour of our zabaglione comes from an ancient rural tradition

Sweet, tasty, naturally energetic and creamy desserts or toppings which bring out the taste of our organic eggs and caress the palate with its ancient flavour. This, in a nutshell, is what best describes our organic gluten-free “zabaglioni”. A return to the authentic flavours of tradition, while incorporating modern day attention to a healthy diet, animal well-being and the environment.
Our organic zabaglione “Sanbay” (with Passito wine) and our organic zabaglione with Muscat wine are both true inviting delicacies due to the use of three simple yet flavoursome ingredients (all certified organic), as required by the original recipe: wine, sugar and eggs from hens free to roam the green pastures of our farm. Characterised by different aromatic notes according to the wine being used, they are ideally savoured pure, one dollop at a time, as a delicious uplifting snack, or in combination with our own hazelnut biscuits, whipped cream, ice cream or fresh fruit salad.

Sanbay is an organic zabaglione, a creamy dessert for connoisseurs that enhances the authentic flavour of our eggs, inspired by the culinary tradition of Piedmont.

Its recipe hasn’t changed since its invention in the XVIth century by the friar Pasquale De Baylon and was then known as “crema di San Baylon” of which have been derived “zabaglione” and our own “Sanbay”.

Light, nutritious and gluten-free, Sanbay acquires its taste and energizing quality from a few simple organic ingredients: eggs from our free-range hens which are fed organic cereals cultivated on our farm, cane sugar and white Passito wine from Sicily, giving it that characteristic aroma of dried fruit.

Served hot or cold it lends itself to the most innovative culinary creations and is perfect to accompany ice cream, whipped cream, dry biscuits or cake and fresh fruit salad. But one can only really taste its goodness and all its nuances when served neat in all its purity, straight from the jar, or when shared with friends and family, served in elegant cups, giving shared moments that extra special touch.

Our organic zabaglione with Muscat wine caresses the palate with its fruity and energetic sweetness.

Egg yolk from our chickens’ healthy and tasty eggs, cane sugar and Muscat wine from Piedmont: three strictly organic ingredients which marry perfectly in order to create a creamy, gluten-free dessert full of taste and highly nutritious, underpinned by a fruity and fresh palate with hints of citrus.

Inspired by the traditional cuisine of Piedmont comes a return of authentic flavours, born out of Claudio’s great passion for creating excellent raw ingredients and as a result of our ongoing pursuit of new sensations.

The low alcohol content of the Muscat wine makes zabaglione the perfect energizing breakfast, a mouthwatering teatime snack, even suitable for children, or the ideal treat for those moments we just want to indulge in some genuine flavor-packed goodness.
